Homemaking :: Recipes, Organizing + Cleaning Motivation!

Updated: Jan 25, 2021

Hey family! This week on my YouTube Channel, I'm sharing a Homemaking, Recipes, + Clean With Me video! This year, I've been working on my mindset, and training myself to be more positive! So with that, I wanted to share some thoughts I had this week -- being thankful, and see all that you are blessed with! Always make sure you have a grateful heart with everything you do -- we can always find a reason to complain, but we also always have a reason to SMILE!

Life never goes perfectly -- whether its messes in your home, or life just doesn't seem to be going right, focus on those happy constants in your life. What is it for you? Find your constant, and focus on it daily -- especially during tough days!

First, I pull EVERYTHING out! That way I can see what I have, what has gone bad (oops!), and what I have space for!

Give your surfaces a good wipe down! I love using the Microfiber Cleaning Ecloth for a good wash, and the Glass & Polishing Ecloth to dry!

Lastly, reload your area, -- and take out the unneeded, unwanted, or old items! Be mindful about what you put back -- make sure it's something you'll use!

It's important to remember, this doesn't have to take long! If you only have 10 minutes, do as much as you can in that time! Even if it's just one shelf/area. You'll feel so much better even if its not a full deep clean + organize.

It's always a good time to share some delish recipes!!

Ingredients ::

  • Large Rotisserie Chicken (or cooked chicken breasts)

  • 1 onion (chopped)

  • 1 can black beans (drained & rinsed)

  • 1 can diced tomatoes (drained)

  • 12 oz can of corn

  • 7 C chicken stock

  • 2 tsp chili powder

  • 2 tsp garlic powder

  • 1 tsp cumin

  • Salt & Pepper (to taste)

First, you'll start out by pulling all the chicken off your rotisserie chicken into bite size pieces (or cook chicken breasts & cut into pieces!) Next, chop your onion & add it to a large stock pot. Sauté until translucent & softened. Then, add in your chicken stock, chicken pieces, black beans, tomatoes, corn, & seasonings. *You can customize this, by adding in more items or taking out the ones you don't like! Then, turn heat to med/low & cook for about 20 minutes, stirring occasionally. Finally, remove from heat, and add toppings!

My best tip to share for this one is to add the cheese at the bottom, so it gets melted & delicious! YUM! Enjoy!!

Ingredients ::

  • Jalapeños (the ones with the lines on them are the spiciest!)

  • Cream cheese

  • Cheddar cheese

  • Bacon

Start out by cutting the jalapeños lengthwise, and deseeding them! Next, spread cream cheese into the inside of each jalapeño in half, followed by sprinkling cheddar cheese on top of the cream cheese. Then, wrap the bacon around the filled jalapeños until it's fully covering the cream cheese insides! If you're using a large jalapeño, you may need to use more than one piece of bacon. Finally, cook them for about 20 minute at 400 degrees, flipping halfway through to cook both sides of the bacon evenly. This can also be done in an air fryer or traditional oven. Enjoy!!

Ingredients ::

  • 1-2 beef sausages (sliced)

  • chopped veggies (your favorites!)

  • 1-2 Tbsp oil

  • Montreal Steak Seasoning (to taste)

  • Salt & Pepper (to taste)

Start out by preheating your oven to 400 degrees & chop all your veggies & sausage. Next, add all of your veggies & sausage into a large mixing bowl, stir to mix it! Then, place all the ingredients onto a baking sheet, followed by drizzling your oil & seasonings on top. You can stir a bit to combine. You won't need excess amount of oil since the sausage will release a bit of oil - unless you've substituted a sausage with less fat like turkey or chicken! Bake in your oven at 400 degrees for 30 minutes or until the veggies are fork tender. Add more seasoning to taste if needed. This can be enjoyed immediately or stored & reheated throughout the week! Enjoy!!

Ingredients ::

  • 1/2 C rolled oats

  • 1/2 C unsweetened almond milk (add more or less depending on the thickness you're wanting!)

  • Drizzle of honey

  • Fresh or frozen fruit

**add more things like chia seeds, cinnamon, coconut flakes, etc! have fun with it!

Start out by getting a bowl (or preferably a 2 cup container with a lid). Then, add in your oats & any other dry ingredient add-ins you choose! Next, simply add in your milk, honey, & fruit and give it a quick stir. Then, place it in your fridge overnight, or for several hours, and when you're ready, pull it out & enjoy!! This couldn't be easier for a quick or on the go breakfast/snack! ENJOY!!

If you're meal prepping this for the week, I prefer to make them one day ahead of eating them. Store in your pantry with ONLY dry ingredients, then add the liquid/perishable ingredients the night before.

I hope you guys enjoy these recipes as much as my family and I do! All these recipes are kid approved -- except maybe the jalapeño poppers, depending on your family's taste for spice!

Be sure to tag me over on Instagram when you've tried these recipes & let me know how you like them! If you've tried these meals but added something different, I'd love to hear about it!

Love you guys!!

XO, amanda
