Hey guys! On my YouTube Channel this week, I'm sharing my last Homemaking + Clean WIth Me video in our Utah home! I'll be sharing some cleaning motivation, as well as three delicious recipes! I know a lot of you have my same vacuum, Shark Apex Uplight, so in today's video I also shared how I clean it! It's so bittersweet -- but we are so excited to move on to the next journey in life! Before I start any cooking, I always do a quick clean up! It may seem silly to clean just before I start cooking and make a mess in the kitchen again, but this way, I start with a clean slate, fresh mind, & stay focused on my cooking with a clean kitchen!

Ingredients ::
1/2 onion (chopped)
1 Tbsp minced garlic
1 tomato (diced)
1/2 green bell pepper (chopped)
2 Tbsp cilantro
1.5 lbs ground beef
4 oz tomato sauce
1 tsp cumin
1-2 bay leaves
2 Tbsp green olives (chopped)
salt/pepper to taste
First, brown your meat in a large sauté pan, breaking up with a spatula. Season with salt/pepper. Once meat is cooked, drained if needed. While meat is cooking, chop all produce, then set aside. Next, add produce to the meat, cook on low for a few minutes. Then add in green olives, along with 2 Tbsp of the juice from the olives for flavor. Along with cumin, bay leaf, and additional salt if needed. Add tomato sauce & 1/4 C of water & mix well. Reduce heat to low, and summer (covered) for 20 minutes. We love to enjoy this over rice, on top of potatoes, in tacos/burritos, there are so many options! ENJOY!!

Ingredients ::
1/4 C Poppyseeds
1/4 C Almond Milk (any milk works!)
1 pkg lemon cake mix
1 (3.4 oz) pkg instant vanilla pudding mix
1 C water
1/2 C oil -or- applesauce
4 eggs
Lemon Glaze (optional) ::
Fresh Lemon juice
Powdered sugar
Vanila Extract (optional)
First, soak the poppyseeds in milk for 30 minutes to 2 hours. *This step is optional, it just makes the seeds slightly softer!* Preheat oven to 350 degrees. In a mixing bowl, mix together cake & pudding mixes. Make a well in the center & pour in water, oil, & eggs. Beat on low speed until blended. Then beat on medium speed for 4 minutes. Stir in poppyseed mixture. Pour batter into greased muffin tin, and bake in 350 degree oven for 15 minutes or until a toothpick inserted into the muffin comes out clean. Let cool in the pan for about 10 minutes, then cool on a wire rack. Enjoy as they are -or- drizzle some lemon glaze on top for an extra lemon burst! ENJOY!!

Ingredients ::
1/2 lb dry Orzo pasta
2 lbs chicken tenders
olive oil
salt/pepper
1 tsp garlic powder
2 Tbsp butter
1/2 onion (chopped)
1 C white cooking wine
2 Tbsp fresh lemon juice
1/2 - 1 C grated parmsan (chopped)
1/4 - 1/2 C fresh basil (torn)
Boil a pot of salted water, and cook orzo pasta as directed. Once al dente, drain & stir in 2 Tbsp olive oil (to prevent sticking). While pasta cooks, season the chicken tenders with salt, pepper, & garlic powder. Then in a large skillet (non-stick), over medium-high heat, add olive oil. When oil is hot, cook chicken tenders just until cooked (2-3 minutes per side). Remove chicken from pan and keep warm. In the same skillet, add butter over medium high heat. Once melted, add garlic & onion, stirring 1-2 minutes. Add cooking wine, deglaze pan by scraping bits loose with your spatula. Reduce liquid by half (about 3 minutes). Add lemon juice & turn off heat. In a large serving bowl, toss with grated parmesan, onion/garlic mixture, basil leaves & salt/pepper to taste. Finally chop chicken into bite sized pieces & add in. Mix well. We love this warm or cold! ENJOY!!
