Healthy Food Prep + Easy Recipes!!

If you've been a part of my YouTube family for a while, you probably know that I was diagnosed with Hashimoto's this past fall. Since then I have gotten back into food/meal prep, eating gluten & dairy free which has made a huge difference, and just living a healthier lifestyle. In today's video, I am sharing lots of homemaking motivation, to give you tips, ideas and motivation to help you live a healthier lifestyle as well. I am not where I want to be with all of this, and am far from perfect, but as always, I'm taking you along with me on my journey & sharing tips along the way! I will have the recipes shared in todays video below, as well as some links to the items I used today so that you can save them easily! I hope you enjoy!!



The first recipe I wanted to share, is less of a recipe, and more of a guide. It's one of our favorite juices & everyone in the family loves it!! So we recently got a juicer, and it's amazing! It juices everything so nicely, especially greens, which our previous juicer definitely struggled with it. We have been making several juices lately, but the ones I shared in this video was celery juice (literally just celery!) lol and what we call spiced carrot juice. In that one, we add lots of carrots, a few green apples, 1" of ginger and 1/2 a lemon (peeled). Thats why I say its more of a guide, because other than the ginger and lemon, there aren't exact measurements, just add in what you have & what you like. I will typically add in a big handful of carrots (maybe 7-8 large carrots) and 2 green apples. This will make a decently big batch, which you can store in the fridge in an air tight container for a day or two, or drink fresh! If you store them in your fridge, these are the glass juice bottles that we have & are loving right now!



The next recipe I shared was our salsa chicken. I feel like everyone makes their own version of this, so I almost feel silly sharing it, but in case you haven't been introduced to Salsa Chicken.... let me be the one to share the magic with you! It couldn't be easier, or more versatile! I'll leave the amounts below, but keep in mind you can adjust this to your own liking, and make the recipe quantity bigger or smaller depending on what you have or want to make. I love to make a bigger batch, and have our family eat on it for leftovers throughout the week. Keep in mind, you can COMPLETELY customize this to your liking, like salsa brand & amount, types of spices, etc... use this more as a guideline to create the perfect recipe for you!



SALSA CHICKEN

  • 1 1/2 lbs chicken (fresh or frozen)

  • 1 1/2 cups of salsa (I use 1/2 cup of salsa per 1/2 lb chicken)

  • 1 Tbsp Taco Seasoning

  • 1 Tbsp Fajita Seasoning

All you do is add into your slow cooker OR instant pot your chicken, salsa & preferred spices (we use taco & fajita). The biggest tip I'll share with this, is make sure you use a salsa that you love the flavor of, because that will be the flavor that the chicken takes on. I personally love getting a refrigerated salsa for this that has a more "fresh" taste. Next just mix up all of your ingredients & cook in the slow cooker on high for 3-4 hours or in your instant pot (my favorite method) for 15 minutes with a 10 minute natural release. Then shred your chicken, and use it on salad, burritos, quesadillas, tacos, on top of rice, etc.... the list goes on and on!


The next recipe is a new favorite of mine! I found it from the Food Lovin Family blog. You can click that link to go straight to her detailed blog post on it, but I'll just share a quick overview of the recipe here!



Jerk Chicken Bowls (chicken, yellow rice & pineapple salsa)

  • 1 1/2 lbs chicken breast, cut into 1 inch pieces

  • 1 Tbsp Jamaican/Carribean Jerk Seasoning

  • 2 C diced pineapple

  • 1/2 C diced red onion

  • 1/4 C chopped cilantro

  • 5 oz package yellow rice, cooked

All you do is cut up the chicken into 1" pieces, then add a small amount of oil to a pan on medium heat. Next add your chicken & sprinkle jerk seasoning all over chicken and stir to coat. Cook until completely cooked through, stirring occasionally. About 6-7 minutes.

While the chicken cooks, make your yellow rice as directed on the package & start making your pineapple salsa. Now I'm not a huge fan of fruit salsas, but trust me, you will love this one! Especially with this specific dish! It's perfection & couldn't be easier!! In a medium bowl, mix together pineapple, cilantro and red onion. That's it! Set aside. Then you can add everything into one bowl & enjoy or separate everything & store in the fridge to enjoy throughout the week!


The final recipe I shared was our black bean & corn salad (you can eat it as a salsa/dip/side) lol it can be served as so many things, but no matter how you enjoy it, just know you'll enjoy it! lol It's a recipe I got from my mom years ago and is always something I love whipping up to enjoy throughout the week! Aside from rinsing the black beans & chopping the onion, it's a dump & go recipe, no need to even cook anything! So delish!!



Black Bean & Corn Salad

  • 2 cans black beans (drained & rinsed)

  • 2 C uncooked fresh or frozen corn (no need to thaw if frozen - our favorite way!)

  • 1 can diced tomatoes (drained but NOT rinsed)

  • 1 small onion (finely diced)

  • 1/4 C dried parsley

  • 2 Tbsp minced garlic

  • 1/4 C white vinegar

  • 3 Tbsp Oil (we use avocado)

  • 2 tsp chili powder

  • 1/2 tsp ground cumin

  • 2 tsp sugar

  • salt & pepper (to taste)

All you do is just add your black beans, corn, tomatoes & onion into a medium bowl & stir until combined. Next in a small bowl, you'll add the rest of your ingredients (spices, garlic, vinegar & oil) mix together & pour over the black bean mixture. Stir well until combined & enjoy right away, or set in the fridge in an air tight container to enjoy later! This dish always tastes better when its had a few hours at least to let the flavors come together! Enjoy!!
