Ingredients ::

  • Fresh green beans (trimmed & chopped)

  • Fresh minced garlic

  • Olive Oil

  • Salt + Pepper to taste

*You can fancy these up by adding in slivered almonds or chopped pecans/walnuts if you want! Yum!

Start by steaming your green beans JUST until they are becoming tender, but still have a lot of bite & crunch left to them (I begin checking them after 5 minutes or so... you don't want to overcook these!)

Next, in a saute pan, add some olive oil along with the freshly minced garlic. Cook on medium heat until the oil begins to bubble. Then, add in your gently steamed green beans & sauce them for about 3 minutes, being careful not to burn the garlic.

That's really it! This is a side dish that people will rave about, and you can keep the secret to yourself how truly easy it was! Serve right away or store in the fridge & eat throughout the week. Enjoy!!

H A S S E L B A C K S W E E T P O T A T O E S

Ingredients ::

  • Sweet potatoes

  • Melted Coconut Oil

*Sweet Option*

  • Coconut sugar

  • Cinnamon

  • Salt

*Savory Option*

  • Minced garlic

  • Rosemary (or another favorite herb)

  • Salt & Pepper

*You can make this a meal by topping it with ground turkey, etc.*

Start by preheating your oven to 400 degrees. Next, wash your sweet potatoes well, but don't peel them. Then, place two wooden spoons on either side of a sweet potato and begin cutting them into 1/8" vertical cuts along the sweet potato... being very careful not to cut all the way through to the bottom (the wooden spoons will make this very easy!) Place cut sweet potatoes onto a parchment paper lined baking dish, then set aside.

In a small bowl, mix together the coconut oil along with the sweet -or- savory ingredients and stir until well combined, then brush most of the infused oil along the cut sweet potatoes.

Bake potatoes in a 400 degree oven for 45 minutes or so... pull them out about 5 minutes before they're finished cooking & brush on the remaining infused oil.

The hasselback sweet potatoes are done cooking when they're fork tender. Enjoy them right away! You can refrigerate them if needed, but they're best served immediately! Add salt & pepper to taste... Enjoy!!

Ingredients ::

  • 3 C pecan halves

  • 1/3 C pure maple syrup

  • 3 Tbsp melted coconut oil

  • 1 tsp vanilla extract

  • 1/2 tsp cinnamon

  • pinch of salt

Start by preheating oven to 375 degrees. In a mixing bowl, add pecans, along with all the other ingredients and give it all a good stir until everything is well combined & pecans are coated.

Next, line a baking sheet with parchment paper & spread out pecans in a single layer.

Bake in a 375 degree oven for 10-15 minutes... stirring every 2 minutes or so & watching them VERY CLOSELY... they burn quickly!

Once they are done, be sure to separate them as best you can, so they don't cool in a large clump. Once they've cooled, enjoy them right away, or if there's any left... store them in an airtight container on the counter for a week. Enjoy!!

Ingredients ::

*Apple mixture*

  • 4-5 apples

  • juice of 1/2 lemon

  • 2 tsp vanilla extract

  • 2 tsp cinnamon

  • dash of nutmeg

*Crisp mixture*

  • 1/3 C melted coconut oil

  • 1 C almond flour

  • 1/2 C chopped pecans

  • 2-3 Tbsp coconut sugar

  • 1 tsp vanilla extract

  • 1 tsp cinnamon

*You can add in coconut flakes as well as substitute or omit the pecans depending on your preference*

Start by preheating the oven to 400 degrees. Wash apples, then peel & thinly slice them. Add them into a medium baking dish & add lemon juice, vanilla, cinnamon, & nutmeg, then stir until spices are well incorporated.

Next, in a small bowl, add melted coconut oil, almond flour, chopped pecans, coconut sugar, vanilla, & cinnamon. Stir well to combine.

Finally, distribute the crisp mixture over the apples, spreading it out as evenly as possible.

Cover baking dish with aluminum foil & bake at 400 degrees for 20 minutes, then remove the foil & return to the oven for an additional 10-15 minutes or until the apples are tender & the crisp is golden brown. Enjoy right away or store in the fridge for several days... Yum!!
