Hey! I'm so excited to be sharing my Fall Clean + Decorate with Me video for 2022 on my YouTube Channel! Although it's still over 100° outside here in Arizona, I just couldn't wait to decorate for fall. This season is one of my favorites! In this week's video, I also shared some delicious fall recipes with y'all! I am making a sheet pan dinner, as well as some yummy apple muffins! I'll be sharing those recipes down below.

A U T U M N S H E E T P A N D I N N E R
Ingredients ::
12 oz sausage (sliced)
16 oz brussels sprouts (trimmed & halved)
1 sweet potato (peeled & chopped)
2 carrots (chopped)
1.5 C green beans (cut into bite sized pieces)
1.5 C fingerling potatoes (halved)
1 red onion (diced)
1-2 Tbsp garlic (minced)
1 Tbsp Italian seasoning
1/3 C maple syrup
1/3 C dijon mustard
Salt & Pepper to taste
**You can use whatever veggies you love & have on hand... a few other ideas are zucchini, broccoli, acorn or butternut squash, snap peas, etc.**
Start by preheating the oven to 400°. Wash and chop all the veggies & sausage, then onto a large baking sheet, add the veggies that take the longest to cook, (sweet potatoes, carrots, & Brussels sprouts). Drizzle with olive oil & season with 1/2 of the Italian seasoning & salt/pepper. Bake in the oven for 10-15 minutes.
While the first batch of veggies are cooking, mix together your maple syrup & dijon mustard in a small bowl until well combined.
Once the veggies have been cooking for 10 minutes, pull them out of the oven, add the rest of the veggies & sausage onto the sheet pan... then pour 3/4 of the maple/dijon dressing over everything (saving some for the end), sprinkle on the remaining Italian seasoning & salt/pepper. Then, return the sheet pan back into the oven for 15 more minutes or until the veggies are fork tender.
Once everything is all cooked, drizzle the remaining maple/dijon dressing over the sausage/veggies & ENJOY! This is amazing right away or stored & enjoyed throughout the week. YUM!

Ingredients ::
2 C flour (gluten free, almond, or wheat)
1/2 tsp baking soda
pinch of salt
2.5 tsp cinnamon
1 apple (grated or shredded)
lemon juice of 1/2 lemon (1 Tbsp)
3 eggs
1/4 C honey
2 Tbsp coconut oil (or melted butter)
**I use the Nameste brand gluten free flour. You can use any of the flours listed above in a 1:1 ratio! All turn out tasty!!
Start by preheating the oven to 325°. Combine all dry ingredients into a large mixing bowl & mix until well combined. In a separate mixing bowl, add grated apple, lemon juice, eggs, honey, and coconut oil.

Next, add the wet ingredients into the dry ingredients, and gently fold them together.
Last, add the batter into a greased muffin tin 3/4 of the way full. Then, bake in a 325° oven for 20-25 minutes or until golden brown & a fork can be inserted & comes out clean. Serve warm or store & enjoy throughout the week. Add a bit of butter or coconut oil for some extra deliciousness... ENJOY!!
