Ingredients ::

Layer 1:

  • 2.5 C pretzels (lightly crush)

  • 1/2 C melted butter

  • 3 Tbsp sugar

Layer 2:

  • 8oz pkg cream cheese

  • 1/2 C sugar

  • 8oz Cool Whip

Layer 3:

  • 6oz pkg strawberry jello

  • 2 C boiling water

  • 2lb frozen sliced strawberries (you can use fresh strawberries, but frozen speeds up the process + is cheaper!)

Preheat oven to 400 degrees. Start by lightly chopping/crushing pretzels. Then add pretzels, sugar, & melted butter into a 9x13 baking dish, and mix together until well blended.

Bake in the oven for 10 minutes, and set aside to cool.

In a mixing bowl, mix together cream cheese & sugar. Then gently fold in Cool Whip. Set aside.

In a small mixing bowl, add 1 pkg strawberry jello along with 2 cups boiling water. Stir until jello is dissolved. Add in frozen sliced strawberries, and stir to combine. Set aside.

Once the pretzel crust has cooled, add in cream cheese mixture & smooth out. Be sure to fully cover the crust so the jello doesn't seep through! Next, pour the jello mixture on top & refrigerate for a few hours until firm.

Enjoy! This will last for several days in a covered dish in the refrigerator.

Ingredients ::

Main Dish:

  • 2lb boneless, sliced ham

  • 1.5lb baby potatoes

  • 12oz fresh green beans

  • 2 cans sliced pineapple

Veggie Sauce:

  • 4 Tbsp oil

  • 2 Tbsp minced garlic

  • 1/2 Tbsp dried thyme

  • 1/2 Tbsp onion powder

  • salt & pepper

Ham Glaze:

  • 1/2 C brown sugar

  • 1/2 C honey

  • 2 Tbsp apple cider vinegar

  • 2 Tbsp dijon mustard

**optional: sprinkle ham & veggies with dried rosemary before cooking!

Preheat oven to 450. Start out by washing produce, cutting potatoes into bite size pieces, and trimming fresh green beans.

On a large baking dish, place cut potatoes on the first 1/3 of the pan. Place the green beans on the next 1/3 of the pan. On the final 1/3 of the pan, alternate ham & pineapple slices. (I usually put 3-4 pieces of ham, followed by two slices of pineapple.)

Next, to make the sauce for the potatoes and green beans, add oil, garlic, thyme, onion powder, salt & pepper into a small bowl. Mix until well combined & drizzle over the veggies.

Then to make the ham glaze, add brown sugar, honey, apple cider vinegar, and dijon mustard into a sauce pan. Stir to combine and cook on low until simmering. Then pour over pineapple & ham.

Bake in the oven for 25-30 minutes, or until the potatoes are fork tender. Serve immediately & enjoy!!

Ingredients ::

  • 2lb carrots (washed and peeled)

*You can make this in the air fryer or the oven. The air fryer is easiest, but both directions are shared!

Air Fryer Directions ::

Begin by wrapping bacon around carrots... try not to overlap the bacon to help it cook evenly.

Place bacon wrapped carrots in air fryer. Cook in a single layer for 10 minutes at 400 degrees.

Next, brush maple syrup over carrots and cook for another 6-10 minutes or until carrots are fork tender and bacon is cooked. Enjoy!!

Oven Directions ::

Begin by precooking the bacon for 10 minutes at 400 degrees.

Next, wrap bacon around carrots... try not to overlap the bacon to help it cook evenly.

Place bacon wrapped carrots back into the oven. Cook in a single layer for 20 minutes at 400 degrees.

Next, brush maple syrup over carrots and cook for another 5-10 minutes or until carrots are fork tender and bacon is cooked. Enjoy!!
