Homemaking Inspiration :: Healthy Recipes

Hey guys!! Welcome back to my blog! I shared a new video this week on my channel talking all about homemaking, cleaning motivation, meal prep inspiration & healthy recipes! I hope you guys find these as delicious & easy as I do! In each recipe, I also shared some of my favorite tips!



PF CHANGS LETTUCE WRAPS


Ingredients:

  • 1/2 onion (chopped)

  • 1" ginger (grated)

  • 1 lb ground chicken

  • Salt & pepper

  • Garlic

  • 2-3 green onions (chopped)

  • 1/2 can of 8 oz can of water chestnuts (chopped)

Soy sauce ingredients:

  • 2 1/2 Tbsp soy sauce

  • 1 Tbsp + 1 tsp rice vinegar

  • 1 Tbsp sesame oil

  • 1 Tbsp peanut butter

  • 1/2 Tbsp water

  • 1/2 Tbsp honey

  • 2 tsp chili sauce


You can eat this meal many ways.

Some of our favorites are eating it over rice or in a lettuce wrap!


The first thing you'll want to do is chop your onion & prep your ginger. (Tip: Freeze your ginger first to prep so much easier!) Then, add onions to your pan, simmer & mix until softening. Add the ground chicken, season with salt & pepper, then cook & drain if necessary. When your chicken is almost done cooking, add in your ginger and garlic. Stir it around & let it cook for a few more minutes! Make the soy sauce, & pop into the microwave for 20 seconds or so, then stir until its pretty well mixed! Add your sauce right into your chicken & give a really good mix! When your sauce is all mixed in, chop up green onions & water chestnuts, add to the pan, & stir to combine!



WON TON TACOS


Ingredients:

  • Ground beef/chicken/turkey

  • 1 can black beans (drained & rinsed)

  • Taco seasoning

  • 1/2 - 1 cup salsa

  • Won Ton wrappers

  • Fiesta blend cheese


Black beans, salsa, and taco toppings are all optional & can be customizable depending on your family's food interests!


First, you'll cook your taco meat as you usually do. (Tip: add a can of drained & rinsed black beans, 1/2 - 1 cup salsa to stretch your meat & add flavor!) Once your taco meat is done cooking, place your won ton wrappers in the muffin tins and use your fingers to gently press them into the mold. Once your won ton wrappers are all pushed in, just add your taco meat straight into the wrappers! Cook in a 400 degree oven for about 8-10 minutes, or until the won ton wrappers are nicely brown! As soon as the won ton tacos come out of the oven, sprinkle with cheese on top! Top with your favorite taco toppings. Some of our favorites are chopped lettuce, olives, sour cream, & salsa!



EASY FRIED RICE

  • 2 eggs

  • 1 bag frozen veggies (cooked & drained)

  • 1 Tbsp Garlic (optional)

  • 1 Tbsp Minced Ginger (optional)

  • Rice (1 1/2 - 2 Cups uncooked) - cook as directed on package

  • Teriyaki or Soy Sauce (add as much as you like... I recommend 1/4 cup - 1/3 cup total)


This meal is so customizable & almost anything can be added or replaced depending on your favorite foods, sauces, & flavors!


This recipe can be so easy! I usually eyeball this one, because it really can be done so easily! First, I cook about 2 eggs in my frying pan on the stove (scrambling them). Once those are cooked, I add in my cooked & drained vegetables. (Tip: Add garlic & minced ginger for some extra flavor!) Add in your rice to the pan. (Tip: I like to cook my rice the day before. It seems to fry better in the pan!) You can add however much rice you want to get your desired veggie to rice ratio) Now you'll add whatever sauces you like, I love adding in a mixture of Teriyaki Sauce & Soy Sauce! Stir all the way through & serve!



BLUEBERRY GRUNT DESSERT

  • 4 cups blueberries (fresh or frozen)

  • 1/2 cup sugar

  • 1/2 cup water

  • 1 Tbsp lemon juice

  • 1/2 tsp cinnamon

  • 1/2 tsp nutmeg


  • 2 cups flour (I use a gluten free mix)

  • 4 tsp baking powder

  • 1/2 tsp salt

  • 3 Tbsp butter (I use dairy free)

  • 1 cup milk (I use unsweetened almond milk)


This recipe is such a delicious dessert and reminds me so much of a blueberry cobbler! The first thing you're going to do is add all your ingredients in to a pot on the stove. You'll cook & stir the mixture on the stove until about 10 minutes, until the blueberries start to break down a little bit! As your blueberry mix is cooking, you're going to make your drop biscuits! In a bowl, you're going to add the flour, baking powder, salt, & butter and mix it with a fork to make sure its all nice & mixed well. After its mixed well, you'll add in about 1 cup of milk and mix. You will want this dough to be wet, not dry and crumbly. Once your blueberries are all done cooking, add them into a nonstick baking dish. On top of that, you'll take some spoonfuls of the dough and drop it on top of the blueberry mixture!


These recipes are not only family favorites, but they are also so quick & easy to prep!
