Easy Healthy Recipes! (gluten + dairy free)

Hey guys! This week I shared some homemaking, cleaning, & decluttering motivation! Also in today's video, I shared some yummy recipes I've been loving during my journey with Hashimoto's. Since my diagnosis, I've noticed eating gluten & dairy free which has made a huge improvement in my overall health! I wanted to share these recipes with you guys because they are not only tasty, but they make eating healthy much more enjoyable! These recipes are in today's video, as well as down below in this post. I hope you love these recipes as much as I do!





This first recipe is so easy & so yummy! It's been something I've enjoyed having in my fridge that isn't just water.


HERBAL ICE TEA

Ingredients:

  • Simple Peach Ice Tea

  • SweetLeaf Sweet Drops

  • Water


All you do is boil water & add it to a large container. Then add the tea bags (add more for deeper flavor). You'll want to stir in the tea bags & let them steep for about 4 minutes. Next, remove the tea bags & add any sweetener you like. (I like using SweetLeaf). Lastly, store it in the fridge in an air tight container & enjoy!



This next recipe is so easy & delicious, my whole family loves it! If you're needing a quick, no-prep, yummy dinner, this one only takes about 20 minutes in the Instant Pot!


DUMP & GO CHICKEN TACO SOUP

Ingredients:

  • 3 cans of beans (rinsed & drained)

  • 1 Large (or 2 small) chicken breasts

  • 2 C corn (fresh, canned or frozen)

  • 1 medium onion (diced)

  • 1 can diced tomatoes

  • 3 Tbsp taco seasoning

  • 1 Tbsp minced garlic

  • 2 C broth/stock


First, you'll add the beans & chicken breast into an Instant Pot or Slow Cooker. Then, you add in the corn, diced onion & tomatoes, taco seasoning, garlic, & broth/stock. Stir to combine the ingredients. Cook in Instant Pot (20 minutes pressure & 10 min natural release) or Slow Cooker (3-4 hours high or 6-8 hours low). Shred chicken, add back to the soup, stir to combine & enjoy!



This last recipe is another favorite of the whole family! My boys love them & I'm also able to eat them because they are gluten free. It's all done in a blender, so you don't have to deal with many dishes afterwards! It's yummy, & best of all, it's an easy recipe to include the kids in your cooking!


Gluten Free Oat Banana Pancakes

Ingredients:

  • 2 C rolled oats

  • 1 C almond milk (unsweetened)

  • 1 banana

  • 2 eggs

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1 tsp vanilla

  • 1 Tbsp maple syrup


All you do is add all ingredients into a blender, & blend! Next, cook them on a pan or griddle & enjoy! If you're prepping these pancakes for a later time, they are so easy to freeze & put in the toaster! They make for quick & easy breakfasts for the kids.
