Hey guys! The last few weeks on my YouTube Channel, I've been decorating & cooking for FALL! I love this season -- especially the decor, candle scents & cozy RECIPES! In today's video, I shared some cleaning & homemaking motivation! M E A L P R E P T I P S
Shop your pantry! Most of the recipes I shared today in my video are recipes I'm able to make out of items I have leftover in my fridge, or extra in my pantry! This saves time & money, only buying the few fresh ingredients you may not have at the moment.
If you're meal prepping for several dishes this week, do all your chopping at once! That way, all the prep is out of the way and makes dinners so much easier & faster to prepare!
When cooking with stainless steel -- if you're noticing your food sticking to the pan, use a little bit of water to add a glaze to your pan. This will actually allow the flavors to come back into your food & keep it tasting delicious!
Make meals as freezer meals! We all get busy, especially during this time of year. Setting aside a few hours in your day to prep a few meals at once, then adding to your freezer makes dinnertime so much easier! All you'll have to do is pull out your freezer meal, add into the crockpot & enjoy with such little prep! Be sure to leave topping items OUT of the recipe until the day you are ready to eat it!

APPLE CINNAMON GRANOLA
Ingredients:
2 cups rolled oats
2/4 C chopped walnuts
1/4 C pepitas
1/4 C pumpkin seeds
2 Tbsp melted coconut oil
3 Tbsp maple syrup
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
Pinch of salt
1 1/2 C chopped dried apples
1/2 C dried cranberries
First, preheat the oven to 350 degrees & spray a baking sheet with cooking spray (or lay a piece of parchment paper down over the baking sheet)! Then, add rolled oats, walnuts, pepitas & pumpkin seeds into a medium bowl & toss with a spoon. Next, drizzle on maple syrup & melted coconut oil and toss again with a spoon. Finally, season your granola with cinnamon, nutmeg, ginger, & salt. Toss to coat! Then, add oat mixture onto the baking sheet. Bake in oven for 10 minutes, then remove & toss. Continue to bake for another 10-15 minutes! Lastly, remove granola from the oven & let it cool for 5 minutes. Add dried apples & cranberries and toss! store in air tight container. Enjoy!!
APPLE PIE OATMEAL
Ingredients:
1 C steel cut oats
3 diced apples (I use Gala)
1 packet apple cider
4 C water
S T O V E T O P ::
Combine all ingredients in a saucepan & bring to a boil. Simmer for about 30 minutes, or until it reaches the consistency that you like. Enjoy!!
S L O W C O O K E R ::
Combine all ingredients in slow cooker & stir! Cook for 2-4 hours on high, or 4-6 hours on low until it reaches the consistency you like! Be sure to stir every hour or so. Enjoy!!
HARVEST CHICKEN SKILLET
Ingredients:
3-4 slices bacon
1 small onion (diced)
2 cloves garlic (minced)
1 1/2 lbs chicken or turkey (raw or leftovers!)
2 small sweet potatoes (cut into 1/4 inch pieces)
1 lb brussel sprouts (trimmed & quartered)
1 tsp ground cinnamon
1/4 tsp nutmeg
1 red apple (I use Gala, diced)
1/4 - 1/2 C chicken broth
1/2 C walnuts, roughly chopped
1/3 C dried cranberries
1 tsp dried thyme
Salt & Pepper
First, you'll heat a large skillet over medium heat. Add bacon & cook until cooked through, flipping as needed. Remove from pan, leaving the bacon grease in the pan! Crumble & reserve the cooked bacon for later. Add chopped onion to the pan with the bacon grease & sauté until tender, (4-5 minutes). Add garlic to the pan & cook for about 30 seconds. Add chicken & cook until browned on both sides & cooked through, (if using raw chicken) - otherwise add leftover (cooked) chicken/turkey to pan to heat up. Set aside, cover, & keep warm. If the pan is dry, add an additional tablespoon oil. Add sweet potatoes, brussel sprouts, cinnamon, nutmeg, and salt & pepper. Stir to combine & cook for 3-4 minutes to allow the veggies to brown. Add apples & chicken broth, then cover & cook for 10-15 minutes. (Check & add more broth as needed to prevent any burning.) Once the veggies are tender, stir in cooked chicken, walnuts, dried cranberries & thyme. Cook everything until is warmed through. Season to taste with additional salt & pepper and serve with crumbled bacon. Enjoy!!
ONE POT ENCHILADAS
Ingredients:
1 lb ground beef
1 can black beans (drained & rinsed)
1 can enchilada sauce
Corn tortillas (as many or little as you need)
Shredded cheese (optional)
Your favorite taco toppings!
First, you'll go ahead & heat a large skillet to medium heat. Then, brown the meat & drain off excess grease. Next, you'll add drained & rinsed black beans & enchilada sauce, & stir well! Allow the mixture to simmer about 10 minutes to let the flavors meld. Then, add sliced corn tortillas and top with cheese (optional). Top with avocado, sour cream, green onions, olives, or whatever your favorite toppings are! Enjoy!!

I made the Harvest Chicken recipe immediately after watching the video, it’s delicious! I happen to have all the ingredients (I normally wouldn’t have Brussels sprouts) and it was quick, easy and tasted fantastic!
